OMG! You know when you eat something, first mouthful, and you just don’t want it to end. That’s when you just know it’s a winner. I can’t even take any credit for it either; I came home one evening, having been out wedding dress shopping all day then out for dinner with some of my bridesmaids (I wasn’t eating salad btw), to find my fiancé making this for himself. He was like, ‘you’re welcome!’ As he offered it to me as a new recipe for the blog. It’s just so good and just proves salads don’t have to be boring.
A big plate of green goodness, topped with some sweet and saltiness. The salt from the feta and bacon is nicely balanced out with potassium from the rocket and the avocado. Let’s face it, anything with avocado in it means business in the health department. And the blueberries are packed full of beautiful antioxidants. There’s some serious skin benefits from each of them. You will be satisfied, inside and out.
75g Feta – cut into small chunks
1 Avocado – cut into small chunks
4 Rashers streaky bacon
2 handfuls Rocket
1/2 red onion – cur into rings
1 tbsp balsamic vinegar
1 tbsp clear honey
2 tbso olive oil
Cook bacon under a grill, turning to cook both sides until crisp.
Meanwhile, make your dressing – Place half the blueberries in a blender with the balsamic vinegar, honey, olive oil and lime and blitz until smooth. Pour contents into a jar and set dressing aside.
Chop avocado and feta into small cubes. Then chop onion into rings or thin slices. Once bacon is cooked, cut into strips.
Build salad by adding rocket to a bowl/plate. Top with the feta, avocado, blueberries, bacon and onion and drizzle with your blueberry dressing.
