Chocolate Protein Seedy Bars

It’s ridiculous just how tasty these bars are. I cannot get enough of them just now. As with all my recipes, they are so nutritious as well and totally guilt free πŸ˜‰ (As long as you don’t eat the whole lot in one go!).
Cacao, pure unrefined chocolate, is the chocolate which is good for us, full of antioxidants, vitamins and minerals. Healthy chocolate heaven right here.

12 Bars
75g Quinoa (dry weight)
30g Sesame seeds
100g Flax seeds (ground)
100g Pumpkin seeds
175g Medjool dates (pitted)
2 tbsp Agave syrup
2 tbsp Cacao (heaped)
2 tbsp Coconut oil
2 tbsp Cacao butter

For the Chocolate Sauce
2 tbsp Coconut oil
2 tbsp Cacao
2 tbsp Agave Syrup
1/2 tsp Tahini
1/4 tsp Vanilla
Pinch of Himalayan pink salt (or sea salt)

1. Cook the quinoa as per the manufacturers instructions and allow to cool.
2. In a food processor, blitz the three seeds together for 10-20 seconds, until they are all nicely crushed.
3. Add the dates to the processor and mix together.
4. Place a heatproof bowl over a pot of hot water on low heat and gently melt the coconut oil and cacao butter. Be careful not to over heat the oils (or burn yourself).
5. Once melted, remove the bowl and add all seed mix, and all remaining ingredients and stir until all mixed together.
6. Line a flat based tin/tray with greaseproof paper. Spread the mixture evenly and press into place, the bars should be about 3/4 of an inch thick. Place in the fridge and to allow to set (minimum 30 minutes).

For the sauce
1. Melt the coconut oil as above. Keeping the gas on a low heat, add the remaining ingredients, stirring to ensure it’s all mixed together nicely.
2. Drizzle generously over the bars. Pop in the fridge for a further 20 minutes to set.
