Oh, how I love these energy balls. Sweet, chocolatey, gooey but crunchy, and oh so yummy. I’ve been playing about with different flavour combinations but this is definitely my favourite. Only problem is, they disappear too fast. Made with slow releasing energy from the oats and packed with protein from the cashews, cacao and tahini, mixed with these beautiful dates, makes for a perfectly balanced snack. They are exactly what’s needed when the mid afternoon slump hits, powering you through the rest of your day. Make a batch of these at the weekend to snack on throughout the week and you’ll have no need, and no interest of grabbing any other refined, sugar laden snack.
Makes approx 20 balls
10 Medjool dates (stone removed)
100g Cashew nuts
100g Jumbo rolled oats (GF)
4 tbsp Cacao powder
2 tbsp Cacao nibs
3-4 tbsp Agave syrup
2 tbsp Maca (optional)
1 tbsp Tahini
1/2 tsp Salt
Place the cashew nuts and oats in a food processor and blitz for 30 seconds.
Add the remaining ingredients and blitz until a sticky mass is formed.
Roll the mix into small balls, roughly 1 inch in diameter, and place in the fridge for an hour or so until set.
NOTE: They will store for up to 3 weeks, but they will never last that long!
